How do you remove the cores on these? I used to have a padlock similar to that and I couldn't figure it out.

Open the lock and remove the screw in the shackle hole. rap the lock on the same side of the shackle the screw is on to dislodge a retainer pin and the cylinder will come out. To replace it, put the core back in and push the retainer pin in with a thin-bladed screwdriver. Replace the set screw.
This is also the method used to retain the tubular cores.
